Sullivans Cove French Oak Tawny Cask Whisky

Cask number TD0405 is proof that not all Sullivans Cove French Oak releases are created equal. They are bottled one cask at a time after all. Allowing their characteristics to shine. This cask does not exhibit the bold fortified wine character that made Sullivans Cove famous, with a much gentler cask influence resulting in a fresher, more modern whisky. Plenty of green split wood and underripe fruit are on the nose, along with enticing marmalade and excellent integration. The palate is nuanced and delicate, with hints of smoke and sweet green tea on a backbone of incredibly fine tannin and outstanding texture. This is a whisky for folks who like pinot noir rather than cabernet sauvignon, and if you’re looking for that big, sweet, tawny character you might be disappointed. But this is a fantastic whisky in a subtle, intriguing style that few other distilleries can produce.
