Nestled in Yass Valley, just north of Canberra, lies Hillman Bros Distilling Co. Brothers Matt and Geoff Hillman honour their grandmothers both in producing hand-crafted gins and spirits, and by naming their two copper-pot stills after Joan and Thelma. Beginning production in ‘21, Hillman Bros Distilling Co. focuses on small batch, hands-on distilling, allowing the brothers the freedom to experiment on smaller scales. Emphasising more contemporary botanicals, they produce gins with distinct flavour profiles, often favouring fruit-forward flavours such as emu apples, elderflower and black limes, and creating interesting and well-thought-out spirits. -JESS CLAYFIELD
