Lilly Pilly and Lemon Aspen are two interesting botanicals to use, both relatively subtle in flavour; it takes a considered effort to bring their flavours out. Chosen in this gin to pay homage to The Rocks, where the distillery is located and where these fruits grow, they work together to create interesting notes. Their fruity qualities play more on the nose, ripe with confection and fresh acidity. Lemon Aspen brings in a piney citrus, with lemon, lime, and white grapefruit characters. Riberry brings forth a sweet rhubarb note, with undercurrents of soft baking spices and blossom. Juniper and lemon aspen are well integrated on the palate, and the conifer notes from the aspen suit the juniper remarkably well. Coupled with some aniseed myrtle, the gin pulls you in with an interesting backbone of flavours. While the lighter, fruity qualities sit delicately on top.
