Lost Phoenix Australian Dry Gin
Directed use of lemon myrtle in this gin envelops it in a sunny and lively disposition, reminiscent of sweet lemon cakes and warm evenings. Within this gin the myrtle is defined and brazen without turning overtly soapy. It is a difficult balance to maintain, especially to carry it throughout the complete drinking experience. On the palate, the citrus becomes an energetic preserved salted-lemon characteristic; it contrasts the palate nicely, which sits in a sweeter citrus note. The heat brought in from pepperberry always brings in an interesting dynamic in the spirit. Rather than bursting forward with a dry, peppery spice, it slowly builds, subtly perceptible throughout. Right before the spirit drops into its finish, the pepperberry crescendos and creates a big pop of flavour before descending and lengthening out the finish.
