Lost Phoenix Barrel-Aged Apple Gin
Deeply reminiscent of warmed hot cross buns with melted butter, this gin strategically uses fruits and additional spices to create a well-balanced aged gin. Often, ageing delicate spirits like gin can bring a lot of tannin and bitter notes from the wood. Ageing is precise in these cases, however, incorporating roasted apples in this equation helps negate potentially harsher quality. It creates a more seamless product that feels well thought out and actualised. Offering this fruit quality helps support the spices; cinnamon in particular is prevalent, yet is kept aligned with all the elements thanks to the fruit character bringing in sweetness. The juniper and classic gin quality is still recognisable within this spirit, bursting forward at the beginning of the aroma and notable towards the end of the palate. It is a more subtle note throughout, which is an expected characteristic in an aged gin.
