Blind Tiger by St Agnes Distillery is a gin with a traditional botanical bill. A lack of intrepid Australian flavours might make someone overlook this gin. However, its polished elegance is only achieved by a production team that truly understands the elements of creating exceptional spirits. This gin leans into a citrus profile, utilising lemon, lime & orange in fresh and dried form. You get this warm baked citrus and a citrus curd note on the nose, while the palate contains all the bright fresh flavours. The choice to distil each botanical separately allows for the definition of each botanical and careful control of their interaction with each other. The anise & baking spice notes begin to kick in at the end, paired with a more oily citrus note, which gives a slightly sweet and lengthy finish. Juniper and savory (Satureja hortensis) is an outstanding botanical combination; the green herbaceous notes of the savory pair well with pine and create a lovely, effortless gin trait throughout.
