Lark Chinotto Cask is one of this storied producer’s most innovative releases, and a testament to their 'have a crack' attitude. Scotland has strict rules about the casks one can use to mature whisky. Here, the rules are much less rigid. Thus, we have single malt whisky matured in casks seasoned with bittersweet citrus myrtifolia, used to make the classic Italian soft drink Chinotto. And while this may sound purely experimental, it’s ended up as one of Lark’s most popular products. An incredible aroma of sandalwood, cinnamon and marmalade emanates from the glass and, while it doesn’t much smell like whisky, it does smell delicious. A very sweet palate of ginger snap biscuits plus a creamy texture with a long but gentle finish make this an entirely enjoyable dram if you're a sweet-tooth like me. While purists may deride this as essentially a flavoured whisky, I say off to Scotland with you as I pour another glass.
