Sullivans Cove American Oak Refill Cask Whisky

American Oak Refill casks have recently been the most frequent of Sullivans Cove releases. Distinguished by the pink chevron, these refill casks have a fascinating provenance. Unlike the majority of Sullivans Cove whiskies matured in ex-bourbon or Aussie fortified casks, these come from virgin oak casks that were filled in the early days of Sullivans Cove and then refilled after those batches were decanted. So this oak, despite being refilled, has never touched anything other than Sullivans Cove. TD0452 is all warm tea with milk and biscuits, with an almost brandy-like sweetness and oak. Subtle yet incredibly complex on the nose, there’s marshmallow and jam like the world’s classiest Wagon Wheel. There’s that peach fuzz texture on the palate that only certain Sullivans whiskies exhibit. It boasts the texture that elevates distilleries like Miyagikyo and Springbank to cult status. It is as refined and beautiful an example as anything Japan has ever produced.
