Callington Mill Pedro Ximenez Single Malt Whisky
Pedro Ximénez is the sweetest of the Spanish sherries, with a flavour like liquefied sultanas. Genuine Spanish PX casks are pretty expensive, so even mass-produced Scottish single malts matured in PX barrels tend to be uncommon. Here we see a whisky matured entirely in these richly infused barrels at a very reasonable price. On the nose, licorice allsorts and cinnamon, along with a good dose of floral grappa, come to the fore. It’s fresh and youthful rather than sticky and stuffy, and I’m pretty into it. The sweetness carries through the palate nicely, balancing out the young spirit and offering it a stage to dance without trampling the tongue, with just enough lingering oak to give it some gravitas. My favourite of the Callingtons I’ve tried so far, and a welcome addition to the Australian whisky pantheon.
