Our Review
Winemakers Niki Nikolovski and Tim Byrne co-founded Babche in ’19, united by a shared commitment to organic farming and traditional (but not conventional) winemaking methods. Eschewing additives and industrial equipment in favour of manual-cranked basket presses and gravity flow systems, they craft expressive, small-batch wines that reflect site and season. In ’21, they began establishing an organic, close-planted vineyard in Timboon, behind the Great Ocean Road. They also operate a small cellar door in the Timboon township.
