King Island Distillery Bass Strait Gidley Dry Gin
Starting with a foundation of traditional gin botanicals has set this gin up to bring nuance and sophistication to the spirit. The angelica, orris and cassia help to elevate and spring up the Australian botanicals used. On the nose, the aroma presents like a classic style of gin, full of fresh pine and vibrant green herbs. The palate offers more distinctive Australian flavours and settles into an overall softer tone. Bottling at 40% has mellowed out the more astringent herbaceous notes and, coupled with more texture-creating, synergistic botanicals, produce an incredibly uniform, pleasant drinking experience. Kakadu plum brings in the subtle, amiable stewed pear characteristic, often a very subdued botanical; they've done well to bring out its loveliest qualities. Using both aniseed myrtle and Tasmanian pepperberry creates some interesting juxtaposition between the heavily textural licorice notes and the dry, warming spice, helping to lift the palate at the end and create a long, gratifying finish.
